Chocolate Cookie Dough Balls


If you are after a homemade chocolate cookie dough fix, then this recipe is for you.  The recipe is straight forward and easy to master, requiring only a blender and some ball rolling skills to create a tasty chocolate cookie dough ball.   Unlike most cookie dough based recipe, this one has a reduced amount of added sugar, and uses peanut butter for the cookie dough texture rather than actual butter.

The recipe makes 8 balls, which can be frozen for up to 3 months or kept in the fridge for another day.   The ingredients will melt in hot temperatures, so if you are going out for the day make sure that you consume the chocolate cookie dough balls within 2-3 hours of leaving the house.

Chocolate Cookie Dough Balls Portion

The balls are high in healthy fats, so try not to consume all balls in one, each ball contains between 125-150kcal (depending on how big you make them).  We recommend 1-2 balls a day as a morning or afternoon snack.  If you are trying to lose weight, we would only recommend 1 ball as a snack to help with keeping your overall daily calorie intake down.

We find that the chocolate cookie dough balls are a great party food item, when my family and I take them to a gathering they always disappear within the first 30mins.


Ingredients

1 cup of raw peanut butter.
1/2 cup of desiccated coconut.
1/3 cup of oat flour.
1 tbsp of maple syrup.
1 tsp of organic stevia.
50g of melted 85% dark chocolate.


Method

  1. Blend the ingredients in a food processor until smooth.
  2. Roll them into balls in your hands.
  3. Add to a plate with baking paper on it.
  4. Melt 50g of chocolate in the microwave for 1min, making sure you check and stir every 20 secs.
  5. With a spoon drizzle and cover the balls in chocolate lines (see image).
  6. Then either serve to be eaten, freeze or leave in the fridge for another day.
