Lamb and Mint Pizza
This recipe is one of a few quick and easy meals in our recipe bank. My wife is a big fan of lamb and we grow so much mint it is coming out our ears, hence the need for lamb and mint pizza in our household.
Is Lamb good for you?
Yes…lamb is loaded with nutrition, such as zinc, iron and Vitamin B12. It is one of the fattier meats on the market, but you can buy the lean cuts from the butchers or supermarket or just trim the fat yourself with a knife. It cooks quite fast so if you overcook this pizza the lamb might go a bit tough.
Is Mint good for you?
Yes….and yes a million more times. Mint is one of those wonderful herbs/weeds that aids digestion, it causes a release of bile from our gallbladder and helps with digesting and absorbing fats. It has been used for thousands of years for its anti-inflammatory properties and calming effect on the stomach. Whether you have mint in your tea or on a pizza this stuff should be a daily addition to your diet.
Are Pizzas good for you?
Yes and No. Pizza’s can be a very heavy meal, especially if you go to a fast food pizza chain. These food chain pizzas tend to have big pizza bases, greasy processed meats and a tonne of cheese on top. Our lamb and mint pizza recipe is a lot healthier, it includes a lot less calories than a takeaway option and can be included as part of a healthy balanced diet.
Ingredients (serves 1-2 people)
- 1 wholemeal wrap as the base
- 1 tbsp of hummus (to spread on the base)
- 80g of lean lamb mince meat
- 1/2 chopped red onion
- 50g of capsicums (peppers)
- 30g of feta cheese
- 1 tbsps of fresh mint yoghurt (after cooking)
- Garnish with a few mint leaves (after cooking).
Method
- On grease proof paper place the wrap in the middle.
- Spread the hummus over the base to cover the majority of the area.
- Sprinkle evenly the chopped onion and capsicum, lamb mince and feta.
- Cook for 20mins in the oven at 170 degrees or until lamb cooked though.
- Serve with dollops of yoghurt and mint leaves.

Final Thought
We should ideally be thinking more sustainably nowadays to preserve our environment. Kangaroo meat would also make a good addition to this dish if it is marinated in herbs and spices before hand.
